I am definitely more productive on GNU/Linux when it comes to any development but MacOSX with XCode is still far better in my eyes than all the MSVC behemonts. I would suggest a quad core with Linux as the more economical and arguably more productive choice. I basically bought the MacBook out of curiosity and I don't regret it but I wouldn't like MacOSX on my big workstation as much as Linux.
I tend to be more productive in Linux too.
And besides: Textmate can be replaced by Emacs.. (Already using it =)
I think I can get something for less than $1,000 - I can always upgrade when I get well off.
Most important features is a graphics card with 1GB video ram, and a quad core with more than 6 GB of system ram.
Then I can always upgrade to SSD disc, Corsair PSU ..., 27" monitor..
I can always get hold of a second-hand Mac later - as it doesn't have to have *umph* to be my second machine.
