I've been working with ogre for a few days now, and its my job to make some content for a project Im working on.

In general whats the best way to create 3d models and animations ?

Is it simply down to what you know? or is there better support for 3D Max, I know this is a very general question but even if some people could share with me how they create there models (maybe include a few links to screenshots and stuff) I just need to get an idea.

At the moment, Im building my Models in Q3Radiant (cause i know it) course this means they look boxy and stuff.. I then convert them to AC3D then to Milkshape and then to .mesh.

Any bit of informaiton releating to content development would be nice.

Why don't you use Milkshape directly? The final result will have a much better look, and you don't have to juggle with brushes ;)
There are plenty of Milkshape modelling tutorials, specially in sites devoted for first-person shoothers (take a look to some Counter-strike modding sites for an example ;))

yeah i could do, does it do the same sorta stuff as 3D Max? (animations etc etc)

I've dabbled with it a little and it does'nt always seem to want to do what i tell it.. selecting vertex's for example.. sometimes it does.. sometimes it does'nt.. i kinda found it fustrating.

You should read a tutorial first (as I can remember, there was a good one for absolute beginners in the official site).
About it's features, yes and no. You can handle skeleton animations and such, but there are still some restrictions, like only one bone assignment per vertex, difficulties handling multi-materials...
