I'll probably get another sata hot swap bay so I can transfer stuff faster between my current system and the new one.
Now I just need to decide on a psu and I can start ordering.

If the voltage is fixed (12v line) then the current and power are proportional.
52A * 12.5V = 650W
60A * 12.5V = 750W
80A (the rating of the Corsair HX1000) * 12.5V = 1000W
If the site says I need at least 863W, then on a Corsair power supply I'd need 69A, which is beyond what a 750W 60A Corsair supply can deliver.
